Chuck Notes: This Sidamo is the kind of coffee that resets your expectations. It’s naturally processed, meaning the beans dry inside the coffee cherry instead of being washed clean right away. After harvest, the cherries are spread out on raised drying beds and turned regularly so they dry evenly in the open air. That slower, careful drying is where the sweetness comes from—and why the cup tastes more like fruit than “traditional” coffee. In the cup, it’s bright and expressive with high sweetness and a lively snap of acidity. The notes that keep showing up for me are strawberry, peach, and kiwi—juicy, clean, and unmistakably fresh. Even with that high acidity, it still carries an above-average body, so it doesn’t feel thin or sharp. It’s vibrant, but it’s balanced. My goal roasting this one is simple: keep it honest.
